Prawn puree is an unleavened deep fried Indian bread, commonly addicted on the Indian subcontinent.
Prawn puree is most normally served at breakfast otherwise as a snack or light feast. It is also provided at special or traditional functions as part of traditional rituals along with other vegetarian food obtainable in prayer as prasadam. It is habitually served with a curry or bhaji, like in Puree bhaji.

Ingredients:

For the curry:

  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp ready-made curry paste
  • 450g/1lb peeled prawns
  • 2 tbsp vegetable oil
  • 1 green bird’s-eye chilli, finely chopped
  • 5cm/1in piece root ginger, grated
  • 2 tbsp malt vinegar
  • 75ml/2¾fl oz double cream

For the puris:

  • 125ml/4¼fl oz warm water
  • pinch salt
  • 250g/9oz chapati flour
  • 1 tbsp chopped fresh coriander
  • vegetable oil, for frying
